Flourless Banana Pancakes

Who doesn’t love pancakes?! I can’t name a single person I know that doesn’t. If you don’t, well… *insert Gretchen Wilson’s infamous line*. We all know which one I’m talking about!

These pancakes are down right the best pancakes I’ve ever made, and I’ve experimented with a ton of different recipes over the years. With only 8 ingredients, this version is made entirely from bananas and oats – NO FLOUR!

The best part is that this recipe leaves you feeling full and satisfied in a way that doesn’t make you feel like you need to call a taxi to get you from the breakfast table to the couch.

Banana Pancakes Recipe

Prep Time, 5 mins
Cook Time, 15 mins
  • 1 c Almond Milk (I use between Silk of Almond Joy)
  • 4 eggs
  • 2 bananas
  • 4 tbsp 100% real maple syrup
  • 3 c rolled oats (I use either steel cut or rolled)
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla

Time to Blend

You’ll want to put everything in your blender and mix it up! I use the Vitamix Explorian Series and it works like a charm for stuff like this among many other talents such as blending soups and smoothies.

Once the mix it all blended, heat up the skillet to about 325 degrees F or about Medium-High heat. Add butter. Life if better with butter, ladies. Embrace it.

I simply poured the mixture out via the easy to use spout on the blender, but you can measure it out too if you prefer!

This mix made about 10 pancakes for me a little bigger than the palm of my hand.

I topped my pancakes with a dash of cinnamon (excellent for the metabolism aka aids in any weight loss journey!) and some yummy blueberries (blueberries are excellent for glowing hair and skin).
